Sourdough Pancakes

Part of living on a boat is eating breakfast. Seriously, don't skip breakfast. Prior to moving onto the boat, I rarely ate breakfast. I simply wasn't hungry until around noon. When sailing and doing boat work, having something in my stomach is key in combatting seasickness, heat exhaustion, and that icky feeling when I don't swallow the motion sickness medication quickly enough and it's the cheap kind that is uncoated and it starts to dissolve. That taste should be avoided at all costs. Luckily these pancakes are so good, they'll do the trick. 

Ingredients:

1/2 cup sourdough starter
2 Tablespoons honey
1 cup flour
1/2 to 1 cup milk/nut milk (depending on how wet your sourdough starter is)
1 egg
1 smashed banana (optional)
1 tablespoon flax (I like this flax best)
3 tsp baking powder

Mix all ingredients together gently. Fry in a pan. It's that easy.
